Guacamole in 3 easy steps

(SERVES 2)
2 chopped baby tomatoes
salt
1/2 a lime/lemon
1 tablespoon chopped cilantro
1 avocado
1) Peel an avocado in a way that you end up with the peel in half. Save these peels.
2) Take out the pit and mash this along with the tomatoes, lime/lemon juice, cilantro, and a dash of salt.
3) While you let this cool in the fridge, rinse out the peels and serve the guacamole inside the peels.

Here is one of my facorite recipes.
TOFU CANNOLI
1 pkg. firm tofu (16 oz.)
6- 8 cannoli shells
2-3 drops of orange juice
1 cup sugar
1/4 tsp. ground cinnamon
1/2 cup semi-sweet chocolate chips
Use a food processor and break chunks of the tofu into it . Process until it is fairly smooth. Keep the tofu in the processor and add the sugar, cinnamon,orange juice, and a quarter cup chocolate chips. When processing, don't let the chocolate liquefy. Leave it in its original form. Spoon the mixture into the cannoli shells. Dip the sides into the leftover chocolate. Sprinkle any leftover sugar and eat.

TIP: CANNOLI SHELLS ARE FOUND IN YOUR LOCAL FOOD STORE.
